Thursday, March 8th 2018 - Visit to Liantunet
On the morning of Thursday March 8th, Tina, Enda, Elsie, Mary and Niamh visited Liantunet – a Restaurant and associated Catering School on a beautifully elevated area outside Trondheim. The Restaurant is frequented by many visitors, locals, and enthusiastic skiers and serves lunch and evening dinner as part of their business. A small section adjacent to the main dining area is used by Secondary School students on a daily/weekly basis where the students learn to prepare, cook, present and serve a multi-course meal. Training, Guidance and Expertise is given by trained chefs and the students learn various culinary skills and theory. As part of their course in Childcare, the adult learners do their work-experience placement here alongside the Secondary students where they observe the work practices, offer guidance and support and generally oversee the smooth running of the operation.
On this particular morning we were greeted by a kitchen full of enthusiastic young chefs preparing a gourmet style lunch which included smoked salmon canapes on oat cakes, winter vegetable soup, a trio of fish and followed by homemade ice-cream alfresco! Each small group of ‘chefs in the making’ presented their offerings and talked about each of the dishes they had made.
It was most personable and the whole operation is most enriching and efficiently run. It is the perfect advertisement for learning through fun and it was very evident to see the benefits for both sets of students.
